When life gives you insane heat…
… make salads! Yep, it’s not quite noon and already 95 degrees out here in NY. I haven’t done any cooking yet today (unless indulging in double stuf oreos and milk counts…) but I DID make a fantabulous salad the other day. So good, so easy. Here it is:
1 head romaine, washed and chopped
1 pint cherry tomatoes, washed and halved
1 cucumber, quartered and chopped
1 small can sliced black olives, drained
3-4 scallions/green onions, thinly sliced
10 slices deli hard salami, cut into strips (can also substitute summer sausage, cubed)
1 palm-sized ball fresh mozzarella, cubed
Italian dressing (I used Wishbone)
Mix all ingredients but lettuce and toss. Add dressing to coat. Add lettuce and toss to coat. If necessary, add more dressing. Serve cold. Excellent with fococcia or olive oil flatbread. Serves 4 as a main dish, 6 as a side dish.
Fabulous. And so easy. And when we get the house (yes, a house! more soon) I’m getting a crockpot. Because turning on the oven in this weather, even with a window air conditioner, is effing crazy.
Tonight? Perhaps a crudite plate. I’ve got radishes, carrots, celery, and romaine hearts and a yummy ranch dip. Also tonight? Mad cleaning. Working 6 days in a row after spending the last weekend out of town makes for a very messy house!
But first? Thrift store shopping! 😀
