More not cooking

Just made a delicious dinner. So easy, nice and cold, creamy, crunchy, and delicious, and not a single heat element used!

Here it is:

Cold Mexican Layer Dip:

1 package cream cheese
1 can black beans, drained and rinsed
1 1/2 cups mild tomato salsa
1 heart of romaine, washed and chopped
1 cup sour cream
shredded sharp cheddar to garnish (optional)

corn chips to serve

In a 9″ pan (I used a round glass casserole), spread the cream cheese on the bottom with a spatula. Top with a layer of beans, then salsa, then the romaine, then dollop the sour cream on top and spread with spatula. Sprinkle cheese on top if desired. Eat dip with corn chips.

Other optional add-ins: sliced scallions, chopped green peppers, fresh tomatoes, fresh corn.

I love not cooking. 🙂 I also cleaned the kitchen a bit. Tonight? Maybe some walking around furniture stores with air conditioning. I love looking at furniture.

    Sounds great! I may have to add this recipe to the menu this week. I can’t stand turning on the stove/oven when it is so warm out!
