Scrap Dinner: Mess ‘O Eggs
Dinner tonight was a conglomeration of scraps from the fridge. What did I have? Two eggs, one bratwurst, a mostly gone bag of shredded mozarella, and a 1/4 bag of baby spinach. Yay egg mess! I love taking eggs and making a juicy, cheesy mess out of them an any ingredients I happen to have on hand. So here’s the fast recipe, which feeds one hungry person as a meal or two as some sort of strange side dish. You could always double it, too.
2 large eggs
2 large handfuls baby spinach
1 handful shredded cheese
pepper to taste
Slice the sausage in half lengthwise then slice crosswise into halfmoons. Slip them into a nonstick skillet on medium-high. Meanwhile, rinse the handfuls of spinach, shake dry, and toss wet into skillet. Stir ocassionally until water sizzles and spinach is fully wilted. Beat pepper into eggs with a fork and add a little water, milk, or heavy cream and beat it in. Dump the eggs into the skillet and stir with spatula until desired juiciness is reached. Add mozarella, stir/flip/smoosh until cheese is melted. Tip out onto plate and devour.
There is no need to add salt to the eggs as the sausage and cheese should be adequately salty.
I consumed this yummy mess with a wedge of leftover sourdough bread with natural crunch peanutbutter and homemade (not by me, alas) chokecherry lemon jelly.
